Catering for corporate tastes

As a corporate catering chef, I've seen tastes change so much over the years. When I started out in the 1980s, everyone wanted super fancy and rich French dishes. Then the tastes changed to Asian inspired dishes as the Australian corporate environment changed its focus to Asia. More recently the tastes have changed towards local foods and more raw, lower carbohydrate options. My blog is all about my memories of the different stages of corporate catering as well as some inspiration from innovative chefs showing the directions that corporate catering is going these days. I hope it's interesting for other chefs.
